What will i be doing?
         Teaching exercise and helping people  have healthier bodies

What will i need to start?
         Knowledge of fitness and group exercises. Aerobics training aside, you may also focus on jazz dancing, martial arts, kickboxing, pilates, and other exercises. Enroll in an aerobics class to learn more about it and start investing in music CDs and exercise videotapes.

How much should i charge?
       P350 an hour per session if you're just starting out and teaching in your client's venue. The more experience you have, the higher you may charge.

How much will i make?
       your earnings will depend on the number of times a week you hold aerobics sessions. The more hours, the happier the returns.

What will i be doing?
         Cooking and selling shredded and pickled green papaya, and regular side dish.

What will i need to start?
        A vegetable peeler, grater, and shaper and knowledge of pickling fruits or vegetables. Papaya is the most common achara and the most salable since it's available year round unlike other vegetables

Who will my customer be?
         You may sell achara directly to consumers or through stores, bazaars, and the wet markets.

How much should i charge?
       P45 per 250gram jar( or P40 per jar for a minimum order of three jars), and P85 per 500grams jar( or P80 per jar wholesale). When selling in a bazaar, add 5 to 10 percent to your selling price to cover your renta and other expenses

How much will i make?
       P10 to P15 per jar of papaya achara and P15 to P20 per jar of ubod or labong achara

Ingredients:
2 pounds fresh strawberries, hulled
4 cups white sugar
1/4 cup lemon juice

Procedures:
In a large bowl, crush strawberries in batches until you have 4 cups of mashed berry. In a heavy saucepan, combine the strawberries, sugar and lemon juice. Stir over low heat until sugar dissolves. Increase heat to high, and bring the mixture to boiling. Boil, stirring often, until the mixture reaches 220 degrees F (105 degrees C). Transfer to sterilized hot jars, leaving 1/4 to headspace 1/2 inch, and seal. Process in a water bath. If the jam is to be consumed immediately, do not bother with processing, and just refrigerate.

 When kids already know what kind of business they want to try, the next step is to determine how much resources they will need to get if off the ground.


Starting a business with capital:
Borrow or save?
If your are willing to help your child start his business, you may lend him the capital. Make sure he commits to a payback plan, with a specific time-frame and specific amount of payment. A young entrepreneur may want to get into the T-shirt business. He may have nice designs and his peers may want to order from him, but without capital, he cannot produce the shirts. If he already has orders, you may lend him the amount for production and he can pay you back as soon as he has collected payment.

Some young entrepreneurs save money for a business. There was a time when kids sold “baler bracelets”. These do not cost much, so one group of teenagers pooled their savings to produce the bracelets. We encourage kids to save P20 from their allowance everyday so that at the end of the school year, they would have approximately P5,000 as start-up capital for a business venture they want to start in the summer.

Spintelligence: The student becomes a teacher
Raffy, a third year student, decided to put his talent for “fire spinning” to good use. He would conduct classes in his village during weekends for teens who would like to learn to do fire spinning, popularly know as “poy” among Filipinos( for “apoy”, which means fire in the vernacular). He also proposed to create a business called “Spintelligence” to encourage other students to take up this hobby. He offered to teach classes in school and had a few students. One of his students eventually became a teacher, too.

Barbecue – Glazed Ham Steak with Maque Choux
Why this recipe works: in its native Louisinan, maque choux is a braised side dish featuring an assortment of ingredients including corn, green bell peppers, and tomatoes. To make maque choux a main course, we add ham steak for heft. And to get dinner on the table in less than 30 minutes, we move everything to the grill. Repeatedly brushing the ham steak with a combination of barbecue sauce, hot sauce, and vinegar as it grills gives the meat a tasty spicy sweet glaze. The corn and bell pepper are also given the grill treatment to create a smoky, tangy complement to the sweet, meaty ham. The tomatoes are chopped and mixed in at the end for a burst of freshness.

Barbecue – Glazed ham steak with Maque Choux
Ingredients: serve 4
½ cup barbecue sauce
1 tablespoon hot sauce
2 tablespoons cider vinegar
2 ears corn, husks and silk removed
1 green bell pepper, seeded and cut into 1 – inch wedges
1 onion, peeled and sliced into ½ - inch rounds
2 tablespoons vegetable oil salt and pepper
1 thick – cut bone – in ham steak (about 2 ½ pounds)
2 ripe tomatoes, chopped

Procedures:
  1. Combine barbecue sauce, hot sauce, and 1 tablespoon vinegar in small bowl. Brush corn, bell pepper, and onion with oil and season with salt and pepper.
  2. Pat ham dry with paper towels. Brush top of ham with 2 tablespoons barbecue sauce mixture. Grill ham, sauce side down, over hot fire until caramelized, 2 to 4 minutes. Brush surface of ham with additional 2 tablespoons sauce mixture, flip ham, and continue to grill until caramelized, 2 to 4 minutes. Repeat brushing and flipping steak 2 more times until ham is well glazed and lightly charred. Transfer to large plate and tent with foil.
  3. Grill vegetables over hot fire, turning occasionally, until lightly charred and tender, 5 to 10 minutes. Let cool slightly, then cut kernels from cob and chop pepper and onion. Transfer vegetables to large bowl and stir in tomatoes and remaining vinegar. Season with salt and pepper. Slice ham steak. Serve with vegetables.

Quick prep tip Cutting corn from the cob
Cutting the kernels from long ears of corn can be tricky. We make the task easier and safer by cutting the ear in half and standing the half ears on their on their cut surface, which are flat and stable. Not only is corn more stable on the work surface, it is also easier to control the knife as it glides down length of only half an ear.

Serve 4

Ingredients:

2 tbs vegetable oil
2 onions, halve lengthwise
1 green bell pepper, cored, seeded, and sliced thin
1 red bell pepper, cored, seeded, and sliced thin
1/2 tsp red pepper flakes salt and pepper
6 mild or hot Italian chicken sausages
4 (6 inch) soft sub rolls
12 slices deli provolone cheese

Procedures:
1. Adjust oven rack to middle position and heat broiler. Heat oil in large skillet over medium high heat until shimmering. Add onions and cook until lightly browned and softened, about 4 minutes. Add green bell pepper , red bell pepper, and pepper flakes and cook until lightly browned and softened, about 6 minutes. Season with salt and pepper

2. Meanwhile, grill sausages over hot fire until just cooked through and golden brown, 8 to 10 minutes. Transfer to cutting board and slice each sausage in half lengthwise. Arrange rolls, cut side up on baking sheet. Place there sausage halves in each roll. Top with onions and peppers mixture, then arrange provolone slices on top. transfer baking sheet to oven and broil until cheese is bubbling, 2 to 4 minutes serve.

Ingredients: Serve 6
2 tablespoon oil
1 medium white onion, sliced into rings
½ cup diced red bell pepper
1/3 cup water
2 tablespoons lemon juice
1 tablespoon minced garlic
1 teaspoon grated lemon pee!
½ teaspoon salt
1 kilo squid, cleaned, ink sacs removed, cut into rings
1 tablespoon cornstarch dissolved in 2 tablespoons water

Procedures:
In a pan, heat oil and sauté onions until transparent. Add bell pepper and cook until tender. Stir in water, lemon juice, garlic, lemon peel, and salt. Let simmer

Add squid and cook stir for about 1 minute.

Stir dissolved cornstarch into squid. Bring to a boil then simmer for about 1 minute. Serve warm.

1/4 cup coconut oil
1 1/4 cups organic creamy peanut butter
3/4 cup ricotta cheese
1/4 teaspoon vanilla extract
1/2 cup honey
1/16 teaspoon salt
1 cup + shredded coconut

Procedures:
Line cookie sheet with wax paper. Smooth coconut oil. When soft, add the peanut butter, ricotta cheese, vanilla, honey and salt and mix well with a whisk. Place in refrigerator for about 10 minutes.

Pour 1 cup shredded coconut (might need more) in a small bowl. Remove the mixture from the refrigerator. Take a teaspoon of the mixture and drop in the grated coconut. With your fingers or a clean spoon dough roll around coconut to coat. Located on cookie sheet. Continue until all are formed / cover. The amount that ending will be determined by the size of the scoops.

Place the cookie sheet in the freezer for about 30 minutes to set. Transfer to a container and store in the freezer or refrigerator. If you keep them in the freezer, are like little bites of coconut / peanut butter ice cream that is just the way I like to eat.

Ingredients: 6 servings 
  • 1 1/2 pounds salmon fillets
  • lemon pepper to taste
  • garlic powder to taste
  • salt to taste
  • 1/3 cup soy sauce
  • 1/3 cup brown sugar
  • 1/3 cup water
  • 1/4 cup vegetable oil

Procedures:
  • Season the salmon fillets with lemon pepper, garlic powder and salt.
  • In a small bowl, combine soy sauce, brown sugar, water and vegetable oil until sugar is dissolved. Place fish in a large plastic bag with zipper with soy sauce mixture, seal and turn to coat. Chill for at least 2 hours.
  • Preheat grill for medium heat.
  • Lightly oil grill grate. Place salmon on the preheated grill, and discard marinade. Cook the salmon for 6-8 minutes per side or until fish flakes easily with a fork.

Ingredients: serve 4 to 6
2 pieces pound cake loaves
1 cup all purpose cream, well chilled
¼ cup powdered sugar
¾ cup sliced peaches
¾ cup sliced bananas
½ cup slivered almonds, divided into 2 portions

Procedures: 
With a serrated knife, slice each pound cake horizontally into 2 equal portions. Set aside.

In a mixing bowl, whip the cream and sugar until fluffy. Divide the resulting cream into 4 portions.

On a serving platter, place one layer of pound cake and cover with 1 portion of the cream mixture, sliced bananas and 1 portion of nuts. Top with another portion of peach cream mixture on top and garnish with the bananas and peaches. Repeat with the other sliced pound cake loaf using the remaining cream mixture and fruit toppings. Chill before serving.

What will I be doing?
            Teaching students how to drive and park their cars

What will I need to start?
            A professional driver’s license and lots of patience. If you prefer to teach in a driving school like A1 or Socialite, you’ll need to show your resume and if they hire you, they’ll endorse you to the Land Transportation Office to secure an instructor’s license. (Keep in mind, however, that you may hat to set your schedule according to what the driving school demands). If you decide to teach driving independently, you’ll have to provide your own car and promotional materials.

Who will my customer be?
            Usually, high school students and older people

How much should I charge?
            At A1 driving School the charges are P2,500 for five days, P3,500 for seven days, P5,000 for 10 days, and P7,500 for 15 days. Automatic driving courses cost P2,750 for five days, P3,850 for seven days, P5,500 for 10 days, and P8,250 for 15 days.

How much will I make?
            You’ll be getting a salary if you choose to teach in driving school. As an independent driving instructor, however, you’ll be paying for gas but you’re free to set your fees.

It presumes that children have their own unique intelligence's and it encourages parents to hone these and make their child's  intelligence shine.

Parents take on the role as strength detectives. helpin children discover their strengths is the best capital we can give them. Most succesful entrepreneurs do not start their business to make money. They do some Because they are either good at it or interested in it. helping children discover their intelligence's allows them to fulfill their potential.

Succesful entrepreneurs have discovered and used their intelligence's in their chosen field. What is interesting is that many entrepreneurial endeaavors are triggered by an experience early on in life, education, or are inspired by someone who believed in him - a parent , a grandparent, a teacher, a friend - and gave him opportunities to make his intelligence bloom. thus, in the journey of the entrepreneurial mind, parents, being the most significant people in a child's life may either bring out or kill blossoming intelligneces.

Ingredients:
* Beef under cut (cut into thin slices) 350 gm
* Chopped Garlic 3-4 cloves
* Chopped ginger 1 tbsp
* Yellow Papaya with skin (paste) 2 tbsp
* Salt to taste
* Mustard pate 1 tsp

For Sauce:
* Chicken stock 5 tbsp
* Ketchup 2 tbsp
* Chili garlic sauce 2 tbsp
* Lemon 1
* Chopped Garlic 1 clove
* Sugar 1 tbsp
* Worcestershire sauce 2 tbsp
* Soya sauce 2 tbsp
* Cinnamon powder 1/4 tsp
* Sugar 1 tbsp
* Black pepper 2 tsp

Procedures:
  • Combine meat, garlic, salt, papaya and ginger paste. Mix well. Add paté mustard and mix again. Let marinate for 10 to 15 minutes. Do not leave for long.
  • Take a skillet or grill pan and grease with a little oil. Place slices in the preheated dish and simmer to give them color. Do not overcook to keep them juicy.
  • When the steaks are ready, keep them apart. To make the sauce, heat a little oil in a skillet and saute the garlic.
  • Add the chicken broth, cinnamon powder, black pepper, and sugar, ketchup and spicy garlic sauce. Mix well. Add the soy sauce and Worcestershire sauce and stir. Simmer for a while.
  • Add lemon juice and stir.
  • Add the steaks with the sauce, but do not use a spoon. Use onion slices, chopped onion sprigs for garnish. Combine and pour some oil varnish. Place the glazed onions sizzling on the hot plate and pour into the meat and serve immediately.

How much should i charge?
      P50 to P300 for a fifteen minute tarot card reading; P300 to P500 per hour at parties irrespective of the number of people served

How much will i make?
    Your earning will vary depending on the day of the week if you're located in a mall. you'll make more money at parties by charging per reading or a flat fee for the whole night

Assistant

What will i be doing?
       Accompanying band to their gigs, carrying their equipment, and running errands for them. Your work will take you to clubs all over the Philippines.

What will i need to start?
      You need no special skills, but those who flourish in this job usually love music.

Who will my customers be?
      Any local band, but mind that the bands needing assistant most are those with a large fan base and do regular gigs.

How much should i charge?
     You'll make about P500 from a two hour gig and P1,000 from a concert or function. you'll be reimbursed for anything you spend.

How much will i make?
     A good band will average five gigs a month and a many as 10 during the holidays. Your transportation and all meal will be taken care of , so your expenses will be minimal.

Makes 6 main dish serving

Ingredient:
1 cup whole wheat bread crumbs
1/4 cup freshly grated parmesan cheese
1/4 cup almonds, chopped finely
2 tablespoons chopped fresh parsley leaves
1 garlic clove, crushed with press
1 tablespoon salt
1/4 teaspoon dried thyme pinch ground black pepper
1/4 cup extra virgin olive oil
1 kilo skinless, boneless checkin breast halves, pounded to 1/2 inch thickness and cut into 12 pieces

procedure:
1. preheat oven to 400F
2. In medium bowl, stir breadcrumbs, parmesan, almonds, parsley, garlic, salt, thyme, and pepper until mixed. Pour oil into pie plate.
3. Dip chicken in oil, then in bread crumb mixture to coat. Place chicken on cookies sheet. Bake 20 minutes or until juices run clear when thickest part of chicken is pierced with tip of knife ( do not turn chicken over).
4. Arrange chicken on warm platte.

each serving about 383 calories, 41g protein, 15g carbohydrate, 16g total fat( 4g saturated), 1g fiber, 91mg cholesterol, 760mg sodium

Ingredients:
1.5 kilos Pork belly cut in the middle to make 2 squares
5 cups Water
1 Medium sized onion chopped
1 Tbsp Rock salt
1 tsp Whole black peppercorns
1 pc Laurel leaf

Sauce:
1 Green mango peeled and cut into small cubes
1 Onion chopped
3 pcs Firm , red tomatoes
2 pcs calamansi , juiced
¼ cup Bottled bagoong isda
50 g Wansuy or coriander leaves , pick out the leaves from the stems and rough-chop
  • Procedures:
  • In a large pot, combine the water, onion, salt, black pepper and bay leaf. Bring to a boil over high heat.
  • While boiling, put in the squares of pork belly. When the file again boil, cover the pot tightly and reduce heat. Boil gently for 3 hours. Drain the boiled pork belly in a colander. (Stock pig may be used to flavor other foods such as stew Monggo).
  • Allow the pork pieces to cool. Dry skin and then refrigerate for at least 3 hours.
  • Preheat turbo grill for 10 minutes. Place the pieces of pork, skin side up, on the rack and roast for 1 hour. Lechon the rest for 5 minutes before cutting. Serve with salsa Tagalog.
  • To make the sauce, combine all ingredients in a bowl and mix well. Cover bowl with plastic wrap. Refrigerate until ready to serve.

Greek Lemon Soup with Chicken Meatballs

Why this Recipe Works: How exactly do you make a creamy, rich soup without any cream? The answer is by using an egg liaison – a mixture of egg yolks and lemon juice – as a binding agent. To avoid scrambling the eggs, we don’t add the yolk mixture directly to the hot soap; we “temper” the liaison first by slowly adding some of the hot broth to the yolk mixture and then whisking the warmed yolk mixture back into the soup. At this point, there’s a gentle simmer will both cook the yolks and thicken the soup. Whit rice can be substituted for the orzo. The mixture for the meatballs will be fairly wet and loose. To tighten the mixture up, we use panko (Japanese-style bread crumbs). We found that they absorb more moisture than regular bread crumbs do.

Ingredient:
8 cups low sodium chicken broth
1 pound ground chicken
1 small onion, grated(about 1 cup)
½ cup panko(Japanese-style bread crumbs)
3 tablespoon chopped fresh mint
3 tablespoon chopped fresh dill
¼ cup chopped fresh parsley
3 large egg yolks and 1 whole egg salt and pepper
1 cup orzo
3 medium carrots, peeled and sliced into ¼ inch rounds
3 tablespoons lemon juice

Procedure:
  1. Bring broth to boil in large saucepan. Cover and set aside. Combine chicken, onion, bread crumbs, mint, dill, parsley, whole egg, 1 teaspoon salt, and ½ teaspoon pepper together in bowl. Knead mixture until well mixed. Shape mixture into 1 inch meatballs(mixture will be soft).
  2. Add meatballs, orzo, and carrot to broth and bring to simmer. Lower heat to medium-low and simmer until meatballs are cooked through and orzo is tender, about 15 minutes.
  3. Gently whisk lemon juice and yolks together in bowl. Whisking constantly, gradually ladle 1 cup hot soup into egg mixture, then stir egg mixture back into soup, again whisking constantly. Gently simmer soup on low heat until slightly thickened, about 2 minutes. Season with salt and pepper.

TEMPERING THE EGGS WITH THE SOUP
Whisking constantly, pour the hot broth in a slow, steady stream into the beaten egg yolk mixture. Once the broth is fully incorporated, slowly pour the warm egg yolk mixture back into the soup, again whisking constantly. Bring the soup back to a gentle simmer and cook until the soup is slightly thickened.

How much should i charge?
         Willy Nubla of scuba rats charges P10,500 for a group of four and P17,000 for one on one lesson. Each session takes two whole day weekends.

How much will i make?
         Half of your fees will go to renting equipment(although students are required to bring heir own basic gear like masks, snorkels, fins, booties, and a wet suit). A part time instructor like Nubla make P2,500 to P4,000 every weekend and full time teacher much as P20,000 a day. just remember that diving is an expensive sport: equipment gets obsolete fast and you may have to buy new ones when necessary

         Most of the clients of Rowell Gomez Panlilio, a dance instructor for almost nine years, are groups of people celebrating special occasions with production numbers. These include companies, schools, and families celebrating anniversaries, pageants, homecoming, debuts, and other events

How much should i charge?
         Per hour, per person, or per package. Panlilio charges P25,000 for a debut package consisting of one cotillion dance, two discotillion dances, one modern jazz dance, and one contemporary dance; and he would have to meet the dancers every other day for one month for practice. (he recently created P10,000 package for a company presentation and had only one week to prepare, which was everyday from 6pm to 10pm) you'll have to charge separately for food, transportation, props and costumes, and production assistants in charge of props, confetti, fireworks and makeup. if the client gives you a budget, you must work on the budget for the props and costumers

How much will i make?
         From the packages you create, deduct the applicable taxes and your assistants salaries. Panlilio's peak season is December, when he gets 12 to 15 clients.

The entrepreneurial mind is for everyone, but starting a business is not. Business basics have to be taught.

All children will benefit from having an entrepreneurial mind that is curios, creative, competent, committed and compassionate. This kind of mindset will give birth to vision, innovation, passion, determination, perseverance and motivation that will serve a child well in any profession or business.

However, if we are to raise entrepreneurs, we not only have to equip children with the entrepreneurial mind, we must also teach them how to start a business.

According to Dr. Eduardo Morato,
An Entrepreneur is someone who can:
  1. contribute significantly to the economy by raising productivity;
  2. create value by introducing new products and services or finding better ways of making them;
  3. innovate products or operating systems; and
  4. expand the business horizontally or vertically;

The goal of an entrepreneur is to start a “business venture”. This is defined by the American Heritage Dictionary of Business Terms as, “a commercial endeavor in which an entrepreneur risks his or her resources in return for an expected profit”.

Profit will always be the goal of any business endeavor, it won’t survive without it. However, I advice parents to tell their children that money should not be the only reason for starting a business. Ask any successful entrepreneur and they will tell you that the financial rewards may not materialize until after years of hard work. Thus, if the sole purpose is to make money, it will not be enough to keep him going when faced with the difficulties and challenges of starting and nurturing a business.

Thai Green Curry with Pork and Zucchini

Why this recipe works: although authentic curry originates in southern India, the word “curry” has evolved into a catchall term used to described any number of spicy, saucy dishes from all over the globe. For this take on a curry and pork dish, we drew inspiration from the flavors of Thailand.  Intensely aromatic and unapologetically spicy, Thai green curry paste adds complexity and depth of flavor to almost anything it touches. It’s also convenient: you  access its benefits by opening a jar, not by scrounging up a litany of exotic ingredients. Blooming the green curry paste in the skillet, then adding coconut milk and fish sauce – both ingredients often found in Thai cuisine – further enhances the Thai – inspired flavor scraping up the fond (the browned bits left behind after cooking the pork) before simmering adds even more depth to this rich, spicy dish.

Ingredients: serve 4
1 large pork tenderloin(about 1 pound), cut into ¾ inch chunks salt and pepper
2 tablespoons vegetable oil
2 medium zucchini, cut into ¾ inch pieces
3 tablespoons Thai green curry paste
1 (14 ounce) can coconut milk
2 tablespoons fish sauce
1 tablespoons brown sugar
½ cup chopped fresh cilantro
1 tablespoon lime juice

Procedures:
  1. pat pork dry with paper towels and season with salt and pepper. Heat 1 tablespoon oil in large skillet over medium – high heat until just smoking. Cook pork until well browned, about 3 minutes per side. Transfer pork to bowl and set aside.
  2. Add remaining oil and zucchini to no – empty skillet and cook until browned, 3 to 5 minutes. Transfer zucchini to bowl with pork and set aside.
  3. Add curry paste to now – empty skillet and cook until fragrant, about 30 seconds. Stir in coconut milk, fish sauce, and sugar, scraping up any browned bits, and bring to simmer over medium heat. Simmer until sauce thickens, about 6 minutes. Stir in browned pork and zucchini, along with any accumulated juices, and cook until heated through, about 2 minutes. Off heat, stir in cilantro and lime juice. Server.

Kitchen Know how Found in pan sauces
Fond is a term that refers to the caramelized browned bits that remain on the bottom of the pan after meat has been sautéed or pan seared. When meat  or chicken browns, something called the maillard reaction occurs. This process is named after the French chemist who first described this reaction roughly one hundred years ago. When the amino acids(or protein components) and natural sugars in meat are subjected to intense heat, like that found in a skillet, they begin to combine and form new compounds. These compounds in turn react to form yet more new flavor compounds, and so on and so on. The browned bits left in the pan are packed with these complex flavors, which in turn are carried over to the pan sauce once the fond has been scraped free from the pan and dissolved into the liquids (broth, wine, etc.) used for the pan sauce. In classic French cooking, fond is also referred to as sucs.

  • Saute onion and garlic in butter over medium heat.
  • Add ground beef and stir chestnut flour, salt, mushrooms and pepper and cook 5 minutes, then add the soup. Cook 10 minutes.
  • Stir in sour cream until heated. Serve over noodles.

Ingredients: serve 4 to 6
8 boneless chicken thighs, cut in half
½ teaspoon salt
2 tablespoon olive oil
1 onion, chopped
3 tablespoons maple syrup
1 tablespoon liquid seasoning
2 tablespoons water
1 cup seedless red grapes

Procedures:
Season chicken with salt
In a skillet, heat oil and sauté onion. Add chicken and brown on both sides. Reduce heat, cover skillet, and cook about 10 to 15 minutes or until chicken pieces are tender and juices run clear when pierced with a fork.

In a bowl, combine maple syrup, liquid seasoning, and water. Pour into skillet and add grapes simmer until sauce thickens slightly, about one minutes

Transfer chicken to a platter and spoon sauce over chicken before serving.

Ingredients
1 clove garlic, crushed
1 tablespoon chilli sauce
2 tablespoons olive oil
4 tablespoons lime juice
1/4 cup chopped fresh mint
4 cups mixed salad leaves
1/2 telegraph cucumber
1 red capsicum, sliced
1 punnet cherry tomatoes, quartered
2 large mangoes, peeled and sliced
16 cooked king prawns, peeled with tails left attached
Freshly ground pepper

Procedures:
1. Combine garlic, chili sauce, oil, lemon juice and mint in a small bowl. Stir well.
2. Wash salad leaves slightly in cold water, and then dry shake or rotate. Blot any excess moisture with a paper towel.
3. Cucumber half cut, leaving the shell. Mix the cucumber, pepper, tomato, mango, shrimp and salad leaves in a large bowl, add the dressing and toss well.
4. Pile the salad on individual plates. Season with freshly ground pepper to taste and serve immediately.
