Cinnamon Tiramisu

Cinnamon Tiramisu

4 pc egg yolks
a cup of white sugar
1 tbs rum
1 tbs water
1 cup mascarpone cheese
1 tsp cinnamon
8 pc lady fingers
1 shot espresso
2 tbs dark rum
1 tbs white sugar
1 cup whipping cream whipped until soft peaks

Over bain marie, whisk together egg yolks white sugar, rum and water until ribbon stage. cool down. soften the mascarpone cheese in the mixer then add cinnamon and egg foam. Fold in whipped cream in a small bowl mix together espresso, rum and sugar. soak ladyfingers and squeeze out excess liquid. place a layer of ladyfingers into a martini or trifle glass. pipe out mascapone cream. repeat the layering of mascoarpone cream until the glass is filled to the top. Smoothen using a palette knife. Allow to set in the chiller for three hours. Dust the top with cinnamon, instant coffee, and cocoa powder.
