Steamed Blue Crabs
Ingredients: 
36 live blue crabs
1/2 cup seafood seasoning
1/2 cup salt
3 cups beer
3 cups distilled white vinegar
1/4 cup seafood seasoning

Procedures: 
  • Right before cooking, carefully place each crab upside down and stick a knife through the shell, just behind mouth.
  • Combine 1/2 cup seafood seasoning, salt, beer, and vinegar in a large stockpot over high heat. Bring to a strong simmer.
  • Fit a screen over the beer mixture and layer the crabs on the screen. Be sure that the crabs are above the simmering liquid. Cover.
  • Steam crabs until they turn bright orange and all of the blue/green color is gone, 20 to 30 minutes. Sprinkle with the remaining 1/4 cup seafood seasoning before serving.

Molasses Glazed Beef kebabs with Black eyed Pea Salad
Why this recipe works: The sweetness of the orange juice, combined with the slightly bitter, smoky edge of molasses and the subtle hint of heat from the jalapeño, gives these beef kebabs a big boost of flavor and adds complexity and intrigue. Steak tips, a.k.a. flap meat, are sold as whole steaks, cubes, and strips. To ensure equally sized chunks that will cook evenly, we prefer to purchase a whole steak and cut it our selves. If whole steaks are not available, our second choice is to cut the tips from strips. The bottom line? Precut steaks tips should be avoided. For maximum caramelization of the glaze, we cut the beef into large 2 inch pieces. This ensures that the meat won’t overcook in the time it takes to brown and caramaelize the exterior. We increased the amount of steak from our usual 1 ½ pounds (for four people) to 2 pounds, who what our kebabs have 4 to 5 pieces of meat per skewer. Fresh squeezed or bottled orange juice can be used in this recipe.

Ingredients:
1 cup orange juice
½ cup, plus 1 teaspoon unsulfured molasses
2 tablespoons lime juice
1 jalapeño chile, seeded and minced
3 garlic cloves
¼ cup chopped fresh cilantro
¼ cup extra virgin olive oil
2 (15.5 ounce) cans black eyed peas, drained and rinsed
1 red bell pepper, seeded and diced salt and pepper
2 pounds steak tips, cut into 2 inch chunks

Procedures:
  1. In medium saucepan, bring orange juice to boil over high heat and reduce to 1/3 cup, about 3 minutes. Stir in ½ cup molasses and continue to boil until mixture reduces to ½ cup.
  2. Meanwhile, whisk lime juice, remaining 1 teaspoon molasses, jalapeño, 1 clove garlic, cilantro, and olive oil in medium bowl. Toss in peas and bell pepper. Season with salt and pepper
  3. Whisk molasses mixture with remaining 2 cloves garlic, ¾ teaspoon pepper, and ½ teaspoon salt in small bowl. Toss beef with molasses mixture. Thread meat evenly onto four 12 – inch metal skewers. Grill kebabs over hot fire, covered, and turn frequently until meat is well browned, 8 to 10 minutes. Serve with black eyed pea salad.

If you’re cooking over very high heat, bamboo skewers will burn and break apart – no matter how long you soak them in water beforehand. We had better luck with metal skewers. They may cost more, but they’re reusable and they can handle the heartiest kebabs without bending or breaking. Not all metal skewers are created equal, however. We had a tough time flipping food on round skewers – the skewer itself turned just fine, but the food stayed in place. Double – pronged skewers turned the food, but some were flimsy and most had a tendency to twist out of their parallel configuration. Other models were to sturdy, with bulky skewers that mangled the meat. Glazed Caribbean tofu with Rice and Peas
Why this recipe works: The combination of coconut milk, rice, and pigeon peas makes a creamy, rich companion for our spicy sweet tofu. Pigeon peas are popular in west Indian cooking, and canned ones which can be found in the canned goods section of most supermarkets are flavorful and easy to use. If you can’t find them, kidney beans or black eyed peas can be substituted. If you want your dish a little spicier, add some of the jalapeno seeds.

Glazed Caribbean Tofu with rice and peas
Ingredients: serve 4
 2 (14 – ounce block firm tofu, cut lengthwise in half, and each plank cut crosswise into 6
    slices.
4 tablespoons vegetable oil

1 onion diced
2 jalapeño chiles, seeded and chopped
1 ½ cups long grain rice
1 (16 ounce) can pigeon peas, drained and rinsed
1 (14 ounce) can coconut milk
1 cup water salt and pepper
¼ cup red pepper jelly
2 tablespoon lime juice
¼ cup jerk spice mix

Procedures:
  1. Lay tofu slices in single layer on several layers of paper towels, cover with several more layers, and top with rimmed baking sheet. Set heavy skillet or dutch oven on baking sheet and let tofu drain for 10 minutes.
  2. Meanwhile, heat 2 tablespoon oil in large saucepan over medium high heat. Ad onion and jalapeno and cook until softened, about 4 minute. Add rice and cook until opaque, about 1 minute. Stir in peas, coconut milk, water, and 1 teaspoon salt. Bring to boil, cover, and cook over low heat until rice is tender, about 20 minutes. Season with salt and pepper
  3. In microwave safe bowl, microwave jelly on high power until bubbly, about 1 minute. Whisk in lime juice. Toss tofu with jerk spice mix. Heat remaining oil in large nonstick skillet over medium high heat until just smoking. Add tofu and cook, turning occasionally, until golden, about 8 minutes. Add jelly mixture to skillet and toss to combine. Simmer until jelly has thickened, about 1 minutes. Serve with rice.

Ingredients
1 1/2 pounds pork roast, cut into 1 inch cubes
1 cup dry white wine
2 teaspoons paprika
1 bay leaf
2 whole cloves
salt and pepper to taste
2 cloves garlic, chopped
4 tablespoons margarine, divided
2 onions, sliced
4 tomatoes, chopped
5 cloves garlic, crushed
2 pounds clams in shell, scrubbed
4 teaspoons chopped fresh cilantro
2 teaspoons chopped fresh parsley
1 lemon, quartered

Procedures:
Put pork in a dish, and add the wine, paprika, bay leaf, cloves, pepper, salt and 2 cloves of garlic. Cover and refrigerate overnight, turning occasionally.

In a large saucepan, melt 2 tablespoons margarine. Saute onions, tomatoes and 5 cloves of garlic. Cook gently until onions are soft; add salt and pepper to taste.

Wash the clams, discarding any that are open. Add them to the onion/tomato mixture. Cover, Cook over high heat until all clams have opened.

Meanwhile, drain the pork; set marinade aside. Heat the remaining 2 tablespoons margarine in a large frying pan over medium heat. Cook pork until brown on all sides. Stir in marinade, and cook until there is very little liquid left. Keep turning pork or it will stick and burn!

Serve the pork/clams in their shells, and the onion mixture with boiled potatoes. Sprinkle everything with coriander and parsley, and garnish with lemon quarters.

Ingredients
8 slices of bread
