Mustard – Glazed Brats with Sweet and Sour Slaw

Why this recipe works: it’s good bet that almost everyone – especially football fans – has had a brat at some point in their life. But what exactly sets these sausages apart from other varieties? Simply put, bratwurst are German – style nutmeg, and caraway seeds. For this dish, we created a bold mustard sauce and a sweet and tangy coleslaw that pair perfectly with the highly spiced, savory sausages. We start by browning the sausages in the skillet, and then we add broth to the pan, cover it, and cook until the brats are no longer pink. The fond on the bottom of the pan releases during simmering and adds to the flavor of the sauce. Once the liquid is reduced, we whisk in tangy, whole – grain mustard with a bit of honey for added sweetness. The aggressive flavor of the sausages. Ingredients : serve 4
3 tablespoon vegetable oil

3 tablespoons whole – grain mustard
¼ cup honey
¼ cup cider vinegar
¼ teaspoon celery seed
½ head green cabbage, shredded
½ red onion, chopped fine salt and pepper

Procedures:
  1. Heat 1 tablespoon oil in large skillet over medium – high heat until just smoking. Add bratwurst and cook until browned on all sides, about 5 minutes add chicken broth, reduce heat to medium – low, cover, and cook until sausages are no longer pink in center, about 10 minutes. Remove cover, increase heat to medium – high, and simmer until liquid has thickened slightly, about 1 minute. Transfer sausages to platter and whisk mustard and 1 tablespoon honey into sauce. Pour sauce over sausage.
  2. Meanwhile, whisk remaining 3 tablespoons honey, vinegar, remaining 2 tablespoons oil, and celery seed in large bowl. Toss cabbage and onion in dressing and season with salt and pepper. Serve with sausage.

From colonial times until refrigeration came along, most American homes kept a barrel of apple cider vinegar for preserving foods. Even through cider vinegar is now used more for brightening sauces and salad dressing than staving off spoilage, most cooks still opt for the most generic brand possible. As local supermarkets have begun to offer a more varied selection – some in the vinegar aisle, some in the “natural foods” section – we wondered if any were worthwhile. To find out, we purchased 10 nationally available brands – six produced domestically, three from France, and one from Canada. Our winner? Maille Apple Cider Vinegar. Why this recipe works: Deli salami makes for a tasty, if unexpected, addition to pasta. Its slightly coarse texture and boldly seasoned flavor work great in concert with slippery, al dente pasta. We chose gemelli for our pasta, mainly because the twister spiral shape brings a unique visual element to the dish; feel free to substitute an equal amount of whatever variety of short pasta you happen to have on hand. Cooking the salami in olive oil before adding the other ingredients to the skillet allows the meatiness of the salami to permeate every element of the dish. Adding the mozzarella right before serving prevents the cheese from melting too much and becoming unpleasantly stringy.

Pasta with olives, salami, and smoked mozzarella
Ingredients: serve 4
2 tablespoons olive oil
3 ounces sliced deli salami, cut into ½ inch strips
1 (9 ounce) box frozen artichoke hearts, thawed and sliced thin
½ cup mixed brine cured olives, pitted and halved
1 garlic clove, minced
1/8 teaspoon red pepper flakes
1 pound gemelli salt and pepper
4 ounces smoked mozzarella, cut into ½ inch pieces
¼ cup chopped fresh parsley

Procedures:
  1. Bring 4 quarts water to boil in large pot. Heat oil in large nonstick skillet over medium high heat until just smoking. Add salami and cook, stirring constantly, until salami is browned and crisp, about 3 minutes. Using slotted spoon, transfer salami to paper towel lined plate and set aside.
  2. Add artichokes to fat in pan and cook until browned, about 3 minutes. Stir in olives, garlic, and pepper flakes and cook until fragrant, about 30 seconds. Remove pan from heat, cover, and keep warm.
  3. Meanwhile, add gemilli and 1 tablespoon salt to boiling water and cook until al dente. Reserve ½ cup cooking water, drain gemelli, and return gemelli to pot. Stir in artichoke mixture, mozzarella, and parsley, adding reserved cooking water as needed. Season with salt and pepper. Sprinkle crisp salami over gemelli. Serve.

Jarred olives come in three basic types at the supermarket: brine cured green, brine cured black, and salt cured black. Curing is the process that removes the bitter compound oleuropien from olives to make them suitable for consumption. Brine cured olives are soaked in a salt solution; salt cured olives are packed in salt and left to sit until nearly all their liquid has been extracted before being covered in oil to replump. Both processes traditionally take weeks or even months. For canned California olives, on the other hand, producers use lye, which “ripens” the olives artificially in a matter of days, then further process the olives to turn their green flesh black.

Ingredients:
2 (6 to 8 oz.) chicken breasts, skinless and boneless
1 cup bread crumbs
1 cup buttermilk
1 teaspoon salt
1/2 teaspoon ground black pepper

Procedures:
  • Cut the chicken breast into pieces 2 × 2 inches. Place chicken in a bowl and pour in the buttermilk. Cover and place in refrigerator to marinate for at least 3 hours (The longer it marinates the better the texture gets).
  • Preheat oven to 400 degrees Fahrenheit. Sprinkle salt and pepper over chicken.
  • Roll the chicken over the bread crumbs. Make sure the chicken is covered properly.
  • Position a rack on a baking sheet. Make sure the grill can withstand high oven temperature. Place the chicken pieces on the grill. Bake for 14-16 minutes.
  • Set the oven to broil settings. Let it stay for 3-5 minutes or until light brown to golden brown.
  • Remove from oven and transfer to a serving plate.

2 lbs. Pork shank (pata), cut into 2 inch thick pieces

1 1/2 cups crushed peanuts
1/2 cup peanut butter
2 medium Chinese eggplant, sliced
2 tablespoons fish sauce
1 bunch bok choy, cleaned
1 1/2 cups string beans, cut in 3 inches length
1 medium onion, diced
5 cloves garlic, crushed
1 tablespoon annatto powder
3 tablespoons cooking oil
1/2 teaspoon ground black pepper
2 cups water or beef broth salt
1/4 cup shrimp paste (bagoong)

Procedures:
  • Pour 2 liters of water in a pot. Bring to a boil. Add about 3 teaspoons of salt, and put in the pork shank. Simmer for 1 hour.
  • Remove the pork from the pot. Set aside. In a pot of hot cooking oil clean. Saute garlic and onion.
  • Add the black pepper. Revolver. Add the pork. Cook for 2 minutes.Put in the fish sauce, crushed peanuts, peanut butter and annatto. Revolver.
